Barbeque Banana Boats (Recipe)

When Riley and I stumbled upon this Banana Boat idea, we thought it was the perfect combination of fun, easy and healthy to try on a lazy TV-watching Monday evening. It’s a fairly simple recipe and can be made with a number of sweet baking ingredients you may already have in your pantry and can be cooked using a barbeque, oven or even a campfire.

Prep time: 2 minutes
Cook time: 5-10 minutes

Ingredients:

Ripe Bananas (1 per person)
Tin Foil (enough to wrap around each banana)
Toppings (anything sweet will do – we used mini butterscotch chips and coconut flakes)

Directions:

Preheat the barbeque to med-high or oven to 350F.

Place bananas on separate individual tin foil pieces. Cut each banana with the peel still on lengthwise just about half way through. Open banana slightly and press your sweet ingredients inside the peel as full as you would like them.

Wrap the banana in tin foil and place upright on the barbeque, oven, or on a grill over a campfire. Let cook for 5-10 minutes, checking once or twice until the toppings begin to melt to your liking.

Remove tin foil and thoroughly enjoy with a spoon.

Verdict: healthy sweet treat surprise, highly recommended
